Cosmic Chocolate

Joel Castillo Berrios is from the island of Puerto Rico, since a young child desserts, chocolate, and pastries have been his passion. After spending 20 years in the financial industry, he decided to follow his passion for pastry and confections and attend the Culinary Institutes of America in Hyde Park, NY. For his externship, he went to Inn at Perry Cabin in St. Michaels, MD, and worked doing plated desserts, chocolate pieces, and wedding cakes.

Kelsey Dwyer is from Oklahoma City, OK and is 21 years old.
Food has always been her passion. Growing up she attended nutritional science camps that sparked her love for culinary. She took on the role of baker for class parties, birthdays, and family weddings. After graduating from Putnam City North in 2020, she decided to attend Culinary school for Baking & Pastry at the Culinary Institute of America in Hyde Park, NY. For her externship, she went to Nantucket, MA working for the Nantucket Golf Club doing banquets, tournaments, and plated desserts at the restaurant.

In April 2023, she graduated from the Hyde Park campus with a Bachelor's Degree in Food Business Management. Shortly after, she headed out to St. Helena, CA for the Advanced Baking & Pastry Concentration. This Fall she's looking to move back to the East Coast to start working in fine dining and banquets.

Chocolateria is the final project event for the Bachelor's students in Creative & Artisanal Chocolates class. This is a complete showcase of all the products produced. The required projects that our team made include:
